Pictures of things I have cooked lately!

  • I know this isn’t the post you were all hoping for, but I hope you all like it anyway!! This is some pictures I have been meaning to add for a while, of things that I have cooked!

    Nachos –

    This is Venison Mince, Tomato’s with Italian herbs and garlic pepper, and various beans (Red Kidney Beans, Green Lima Beans, Butter beans, and Chickpeas) on nachos corn chips with sour cream. Sometimes I add cheese but if I do not much, its really tasty!

    Entre – Cheesy Garlic bread and a Kebob

    This is some cheese garlic bread and a Kebob ,

    The Garlic bread is made with Crushed Garlic and margarine spread on bread. Then with a bit of cheese down the middle and Italian herbs on top.

    The Kebob is made with mussels wrapped in bacon, sprinkled with garlic pepper and then put on the stick with Red Capsicum (Bell Pepper), Olives and tomato.

    Sweet and Tangy Venison Burger!!

    Now for a very odd burger! This is Venison marinated in port wine and garlic with tomato chutney mixed with honey mustard, The salad though, is what makes it weird!

    Its Beetroot with snow pea shoots, watercress, mesclun lettuce and finished cheese, carrot, raisin and passion fruit base. I know those flavours may sound confusing, but its REALLY yummy!!


    Grilled Lamb, Garlic bread and Carrot, Rasin, Passion fruit Salad with Plum Sauce

    This is one of my favourite dishes! Its Grilled Lamb and Cheesy Garlic Bread served on nice bed of lettuce with red onion and mushroom surrounded by a delicious carrot, Rasin and Passionfruit Salad with a plum dipping sauce!


    Pan-fried Salmon in Lime Butter Sauce with Kiwifruit Salsa

    And this one I only just made yesterday while visiting my friends house! When I’m invited to help cook dinner, I do not disappoint! (I bet that makes her giggle) of course I had help chopping and doing some of it, but I was the head cheff!

    First we made the kiwifruit salsa, we gently and only for a little bit, fried some red onion… just enough to loose the sting but not the crunch! We then chopped up 1/3 a cup of coriander, 4 kiwifruit and a red capsicum, then added some mesclun lettuce. Ideally I would have added watercress to but couldn’t get any. We then swished it around with a spoon! and mixed it well! Then added a little bit of salt and some black pepper!

    The colour of the green and red really goes well with the pink salmon colour!



    Now the important parts, Salmon and Lime Butter Sauce! You pan-fry the salmon with some oil till its how you want, then with all the left over juices and oil, you drain it to a separate small pot, you add 1 finely chopped and diced garlic clove, the cook gently for a bit and then you add butter. We used a bit over 1/4 of butter. You keep stirring, making sure it doesn’t sit still and burn. When all the butter is melted you add 1/8th of fresh lime juice! Then continue to stir a little bit longer. You then add a little bit of chopped coriander and finally about 1 tablespoon of salt and half of black pepper!

    When its time to serve the plate, make sure the salmon has enough space around it, and pour the butter sauce over, the kiwifruit salsa goes to the far side. Before serving make sure you wait a few minutes, just so the butter sauce has time to settle.

    And although you can’t see it in this photo, we also had some gently toasted (not till its hard but still soft) sour dough bread, cut into strips, (About the size of your typical French Stick Garlic Bread length) so that you can use it to soak up the butter sauce and clear the plate! hehe

    Who would of thought the kiwi salsa would go so well with salmon!!!!
